One bite is all it takes to dance in heaven at CENTRAL Restaurant in Lima, Peru.

So grateful for the opportunity to taste and witness the art of food at one of Lima's most prestigious restaurants (had no idea it was the number 6 restaurant in the world)! It was truly an extraordinary experience, with a tasting menu that features flora and fauna from each elevations ecosystem in Peru. Ingredients reach all the way from the Pacific Ocean to the Andes, to the country’s high and low jungles, and even levels of extreme altitude. Not to mention, owner and head chef Virgilio Martínez himself was there to explain a few of the tastings!! And his beautiful book that I now own highlights recipes and ingredients and shares his journey across Peru with breathtaking photographs.

Learning about the flavors, textures, knowledge, research, and seeing the complete respect for each product used, CENTRAL definitely deserves to be one of the best restaurants in the world!
